BUT today I'm going back to a Hottie Detox classic with this no cook Zucchini Pasta with Creamy Avocado Pesto Sauce.
I'm just all about convenience these days, and the less time I spend cooking, the better. Can you relate?

• I used vegan Parm and so can you!
• No cook needed!
Here is what you'll need!
Servings: 2 per recipe
INGREDIENTS
2 medium zucchini (or koussa)
1/2 avocado
1 cup fresh basil
2 cloves garlic
Salt and pepper
Parmesan cheese (vegan or reduced fat)
Water
INSTRUCTIONS
1- Using a spiralizer, mandolin Or cheese grater, Cut zucchini into noodle like stripes
2- Blend Avocado, Basil, salt, pepper, garlic until creamy, add water until desired consistency is reached.
3- Add Parmesan
4- Mix creamy avocado pesto sauce with zucchini pasta, add more parm if you wish and Garnish with pine nuts, basil and grape tomatoes.
