3 WAYS EGG CUPS | HEALTHY ON THE GO BREAKFAST | MEAL PREP

Today I thought we’d kick off the new year with not 1, not 2, not 3, BUT 4 healthy egg cup recipes to use in your meal prep for the week, because you can never have too many!

These easy egg cups are perfect for a high-protein breakfast or an on-the-go snack to keep you on track all week! My fav? Pizza!! Which one are you excited to make?

Hottie detox

Here is what you'll need!

 

One Muffin Tin Three Healthy Breakfasts

Servings: 6 per recipe

 

TACO EGG CUPS

 

INGREDIENTS

10 eggs or 2 cups egg whites

4 oz (113g) ground turkey
Taco seasoning (chili, paprika, cumin)

Garlic salt and pepper
½ onion, chopped

½ green/red bell peppers

PIZZA EGG CUPS

 

INGREDIENTS

10 eggs or 2 cups egg whites
¼ cup pizza sauce
1 cup mushrooms, sliced
3 tablespoons olives, chopped
1 cup grape tomatoes, chopped
1 cup reduced fat or vegan cheddar cheese
1 cup reduced fat or vegan mozzarella cheese
Oregano

Red pepper flakes (optional)

HASHBROWN EGG CUPS

INGREDIENTS

6 eggs
1 baking potato shredded

Salt/pepper

 

PREPARATION

Taco Egg Cups

  1. Preheat oven to 375ºF and spray a 6-cup, nonstick muffin tin with cooking spray.
  2. Add ground turkey to a nonstick skillet and heat over medium/high heat. Add spices and saute until turkey is fully cooked.
  3. Transfer browned meat into muffin cups. Then prep vegetables by finely dicing green pepper, red pepper, and onion. Evenly spread out among muffin cups.
  4. In a medium bowl, whisk together eggs. Then, pour egg mixture evenly on top of veggies in order to fill each cup. Use a fork or knife to mix in order to make sure the veggies are evenly distributed within the egg.
  5. Season the top of each egg cup with salt and pepper, to taste, and then sprinkle on cheese.
  6. Bake at 375ºF for around 15-20 minutes.

Pizza Egg Cups

  1. Preheat oven to 375ºF and spray a 6-cup, nonstick muffin tin with cooking spray.
  2. In a medium bowl, whisk together eggs.
  3. Add pizza sauce and toppings (mushrooms, olives, tomatoes), cheese and oregano/red pepper flakes.
  4. Then, pour egg mixture evenly on top of veggies in order to fill each cup.
  5. Season the top of each egg cup with salt and pepper, to taste, and add mozzarella cheese then bake at 375ºF for around 15 minutes.

 

Hashbrown Egg Cups

  1. Preheat oven to 400ºF and spray a 12-cup, nonstick muffin tin with cooking spray. Set aside.
  2. Add shredded baking potatoes and press down firmly so it covers the sides completely.
  3. Crack 1 egg inside of each hashbrown basket. Make sure that you use large eggs as anything bigger will be too much egg to hold in the muffins.
  4. Bake for 10-15 minutes depending on how runny you like your eggs.
  5. Finally, season with pepper.
