⌛️Time to make: 20 mins
🔸1 small cabbage head
🔸1/2 lb extra lean ground turkey or tofu
🔸1 small onion, diced
🔸1 tsp garlic
🔸Natural taco seasoning
🔸1 cup enchilada sauce
🔸1 cup shredded cheese ( I use vegan cheese by @daiyafoods it is #kosher #parve )
🔹Easy Enchilada Sauce
1 tbsp baking powder
1/4 cup chili powder
1 cup chicken broth
2 tbsps tomato paste
1 tsp oregano
1 tsp cumin
🌱VEGAN: sub turkey for ground tofu+use vegan cheese
Remove the core of the cabbage with a knife. Immerse the head of cabbage in boiling water for 3 mins and steam, peel off each leaf with tongs as soon as its flexible
Spray skillet with cooking spray, sautéed
onion, garlic, add ground turkey, taco seasoning and water. Saute for 6-8 mins, or until the meat is cooked
3⃣To assemble the enchiladas
set up an assembly line including: cabbage, you can even add beans, ground turkey or Tofu. Lay out a cabbage leave, and add 2 tbsps of filling over the surface of the cabbage
4⃣Roll up Cabbage and place in a greased 9 x13-inch baking dish. Repeat with the remaining ingredients. Then spread the enchilada sauce on top of the cabbage, sprinkle on cheese
5⃣Bake covered until cheese melts (10-15 mins) Remove from oven, add cilantro
