INGREDIENTS
- 1 medium cauliflower head
- 1 cup ground flaxseed or flaxseed meal
- Sweetener of choice (1/4-1 cup to taste)
- 1/3 cup cacao or carob powder
- 1/2 cup water or milk of choice (almond, coconut...)
INSTRUCTIONS
Mix cauliflower in a high speed blender with 1/4 cup water until smooth
Add remaining ingredients
Line the base and sides of rectangular cake pan with parchment paper
Spray with cooking spray
Pour the cake mixture into the pan, spreading it evenly
Place in the center of the oven and bake for 30 minutes or more at 350F, until brown and set; a toothpick inserted into the center of the cake should come out clean. Remove from the oven and leave for at least 20 minutes before serving.
